To be honest, the idea of sunflower seed butter freaked me out at first. I remember thinking, “sunflower seeds aren’t even that good whole?!” Then, a friend in my English class brought some with a few pretzels as a snack and insisted I try one. Being polite, I accepted and hoped I could find a way to plug my nose so that I wouldn’t taste it without her seeing.
And I’m glad I did, because it was good! Yes – creamy sunflower seeds taste good. I told my friends about my latest food-encounter and how I really liked it, and they thought I was weird.
They always think I’m weird, and then they taste my food.
With that said, I know I may seem like the number one fan of banana and peanut butter, but sunflower seed butter is quickly catching up in the race.
You’ll understand what I’m saying when you try these.
Makes 1 serving
2 tbsp. sunflower seed butter (or your favorite nut-butter)
1. Slice the banana into rounds and arrange on a plate.
2. Spread a small amount of nut-butter on half of the banana slices and sprinkle a little cinnamon on top (if using).
3. Make a sandwich by topping the slices with cinnamon and nut-butter with the slices that don’t have anything on them.
4. Serve immediately!
