Few things could disappoint a sweet tooth more than vegan ice cream that cracks at the dig of the spoon. Creaminess seems almost sacred in the world of dairy-free frozen treats.
I've avoided the challenge of creating my own vegan ice cream recipe for the same reason I still haven't made bread: it intimidates me! These are two of the simplest foods to make, right? So... why so scared, Haley?
Probably because I hold such high expectations. If you know me, you know how true that statement is. Yet, despite the daunting intimidation factor of homemade bread and homemade "ice cream", these are still two of my favorite foods. So I guess I'm kind of stuck - I can either settle for store-bought versions of these classics orrrrrr I can suck it up, accept that I might and probably will mess up at least once, and have fun along the way.
The recipe-development process (aka cooking) is, like, my all-time favorite activity. Running? Fantastic, but not in the cards for me at the moment. Reading? A relaxing leisure hobby, but sometimes too quiet. Cooking, however... ahhh. Unbeatable.
It's little fire inside my heart that I can't (and won't ever try to) extinguish.
There will be no settling for store-bought versions in my book, at least not when it comes to my favorites. So, with that, I give you my first attempt at vegan ice cream! Thankfully, this first attempt was most definitely a success. I think the trick to keeping it creamy rather than rock-hard after freezing it is to occasionally stir it while it sits in the freezer.
Oh, and FAT. Because bananas don't yield much other than richness, sweetness, and potassium, I wanted to add in a component to give that sacred creaminess. Enter in DrinkRAU and NuttZo. Wow - what a combo.
So, four ingredient dairy-free ice cream. You think you can handle that? I think you can.
Makes 3-4 servings
2 cups sliced frozen bananas
1/4 cup Drink RAU Semi-Sweet Cacao Superfood Drink
2 tbsp. unsweetened cacao powder
3 heaping tbsp. NuttZo Paleo Chocolate Power Fuel
- Blend the frozen bananas and Drink RAU until smooth. Add in the cacao powder and NuttZo, and blend again until smooth and well-incorporated.
- Freeze at least 2 hours, stirring 30-40 minutes.
- Serve immediately and enjoy!
