Can we just give tacos a round of applause for being one of the best food groups out there? So good.

I love tacos. That is all. 

Makes 2 tacos 

1/2 cup cooked lentils (Trader Joe's brand is best) 
2-3 tbsp. hummus
4-5 cremini mushrooms, sliced thinly
1 tsp. seasoning (taco, oregano, salt & pepper, etc.)
Oil, for the pan (I recommend avocado, coconut, or almond) 
Romaine lettuce, shredded (or ripped lol) 
2 corn tortillas
Optional: cherry tomatoes, sliced

1. Heat a large pan over medium heat and coat with a little oil, just less than a tablespoon. Toss the in the mushrooms and seasoning. Cook until they turn a darker brown color and look soft. Remove from heat and set aside to cool. 
2. Heat the tortillas however you like - microwave, open flame, toaster, etc. - and then spread each one with an even amount of hummus. You can put the lettuce here or on top; I've noticed people do it both ways. Add the mushrooms, and finally a quarter cup of lentils on top of each. Top with cherry tomatoes if you'd like!
