Loaded Back Bean Burritos (Vegan, GF Option)

SO, I made these burritos like a month ago and planned to put them in the ebook, buuuuuuuut I'm just torturing you guys more and more with each picture and I feel bad. 

I'm squeezing as much out of my free-time as possible to work on this thing so I'm ESTIMATING about another month until I release it :)  

CAN'T WAIT. In the meantime, eat burritos. 

Makes 2 burritos

2 whole-grain tortillas
½ avocado, sliced lengthwise
1 ½ cups cooked brown rice, divided
1 cup black beans, rinsed
2/3 cup cooked yellow corn
1 red bell pepper, sliced lengthwise
1 green bell pepper, sliced lengthwise
½ onion, sliced lengthwise
2 cloves garlic
Cilantro, chopped
Optional: Salsa, lemon juice, lettuce, vegan cheese

  1. Heat a large nonstick skillet over medium-high heat and mince the garlic cloves. When the pan is hot, toss in the onion and bell peppers. Cook to soften and add a char to the peppers.
  2. Start assembling the burritos – lay the tortillas on a flat surface and begin by dividing the avocado slices and brown rice evenly between each burrito. Next, add ½ cup black beans and 1/3 cup corn to each burrito. Set aside
  3. Check the pepper and onion mixture. Remove it from the heat when they’ve charred slightly and softened. Let them cool for a minute.
  4. Add the peppers and onion to each burrito, top with cilantro and any other additional toppings, and wrap the tortillas tightly.
  5. Enjoy!
