BBQ Mushroom Pizza (Vegan)

"Hey," he says, with an irresistibly smooth head nod (yes, it was that head nod). 

"HEY WHAT'S UP," I respond, in an unnecessarily loud, obviously excited tone of voice. Well done, Haley, well done. 

Boys are not my forte. Not. One. Bit. One minute, I'm all "Ooooh he's cute!" and then I'm on a date with said cutie and I'm all "Nope. Not gonna' work, he's too _____ (fill in the blank, if you can read my mind)". Maybe I'm too picky? Maybe I have not the slightest idea what I'm doing and should just stick with Jesus - keep singing love songs to Him like I always do. 

When it comes to pizza, however, that's a different story. I don't know if I'll EVER turn down an invitation for pizza (unless its got, like, pepperoni on it or something, of course). And I don't really have a "type" either. Just plain with vegan cheese? Sure. Spinach and tofu? Sounds good...

... piled high with veggies atop a smooth layer of BBQ sauce? YES. Clearly, pizza is the winner here. Specifically, this one. 

Makes 2 pizzas 

1 package Trader Joe's whole wheat pizza dough (or an equivalent amount of other dough) 
1 medium zucchini, sliced and halved
1 cup baby bella mushrooms, sliced
1 cup greens (I used steamed kale + fresh spinach) 
1/2 cup shredded carrots
4 tbsp. barbecue sauce
Vegan mozzarella cheese, or topping
Fresh cilantro, roughly chopped, for garnish

  1. Preheat oven to 475 degrees F, or according to package/recipe instructions. Lightly flour a large baking sheet or pizza pan and set aside. 
  2. Roll out the dough onto a floured countertop until you reach the desired thickness of the crust. Spread BBQ sauce on first, then layer the greens, mushrooms, zucchini, and remaining veggies on top and sprinkle with vegan cheese. 
  3. Bake for about 12-15 minutes - the cooking time will vary depending on thickness of your crust, so keep an eye on it. Remove when crust is golden brown and firm to the touch. 
  4. Top with cilantro, slice and enjoy!
