Tofu and Chickpea Salad (Vegan, GF)

Alright, so I reallyreallyreallyreallyreallyreally miss SLO. I miss my friends. I miss my dorm (yes, I miss my dorm), I miss the coffee shops, I miss Bliss Café, I miss Cru.

I miss SLOme.

But, having a full kitchen (mostly to myself), easy access to organic, vegan, fresh food and produce, and the availability to spend hours searching for recipes and designing them, shopping for the perfect ingredients, and losing myself in the kitchen as I prepare each dish is one thing keeping me around (love you, Mom and Dad).

Okay, none of my recipes really take hours to complete, but you get the point. I like food, and I like the freedom of time I have here at home.

A couple nights ago, you probably saw my recipe for this marinated grilled tofu. Did you try it?

If not, here’s another chance. We had leftovers and I was really craving it last night for dinner, but there wasn’t enough to fill my hungry stomach so I racked my brain and pantry for more to add.

An egg? Ehh, too much protein – I’ll be stuffed.  

More tofu? No, leftovers + the fresh version = not a good choice.

Quinoa? Don’t feel like cooking it.

Beans? Ba da bean ba da boom. We’ve got a winner.

While my dad reheated a burger (shame on him for cheating on #MeatlessMonday) and my mom cooked some (weirdly textured and kind of gross) rice noodles, I threw all my ingredients into a bowl and called it dinner. 

When leftovers work (like, when leftovers made into a meal doesn’t taste like reheated scrambled eggs), good stuff’s going down.

Good stuff went down last night.

I know I had this for dinner, but it felt like more of a lunch kinda’ thing. So that’s why it’s going in the lunch category for you guys, but feel free to eat it whenever.

Makes 1 bowl

3 oz. marinated grilled tofu, diced
1/3 cup low-sodium garbanzo beans
1/3 cup tomato, diced
½ avocado, diced
1 cup mixed greens or spinach
1-2 tbsp. tofu marinade

1.     Grab a bowl, throw in the greens/spinach, then the beans, tomato, and avocado, and then the tofu. If the tofu is leftover, heat it up in the microwave or in a pan on the stove quickly. 
2.     Drizzle the marinade over the top, and enjoy!
