October 15 - LAZY RAINY DAY EATS

Breakfast 

Waffle sandwich - 1 vegan-hacked waffle (recipe here) + 2 (ish) tbsp. Wild Friends Gingerbread Peanut Butter + 1 sliced banana 

  • I ate half the waffle plain, straight out of the toaster, and the other half folded and stuffed with that deeeeeelicious gingerbread peanut butter and banana slices. SO GOOD. 

Snack 

1 GoMacro Protein Pleasure Bar + Guava Goodness GT's Kombucha 

Snack 

Carrots + Trader Joe's Eggplant Hummus, 2 baby apples and one PB apple oatmeal protein ball

Dinner 

Roasted veggie quesadilla - assorted roasted veggies (butternut squash, baby potatoes, brussel sprouts, and squash) + greens + Chao Tomato Cayenne vegan cheese slices  + nutritional yeast+ corn tortillas 

Dessert

Fall "mock-tail" - Trader Joe's Honeycrisp Apple Cider + sparkling water + cinnamon sticks + chopped apples 

Aaaaaaand that is all of today's eats! Gorgeous? Ehh, maybe not. Delicious? Heck yeah. Enjoyed? So so so much :) Thanks for reading!
