My first "What I Ate Wednesday" post! Hello readers :) I'm posting these for anyone and everyone curious about what a college vegan eats - budget-friendly and healthy.
These posts won't have much writing, except for some explanation as to what each dish is because I know that sometimes my food leaves people a little puzzled (if only you could taste it hehehe). The pictures will be totally naked - no filter! These are pretty close to, if not exactly, what I eat - give or take a few toppings/sauces added at the last minute or halfway through just for the heck of it, you know? Anyway, let's get started!
3/4 cup rolled oats + water + 2 tbsp. cacao powder + 2 tbsp. PB2 + banana + 4 dates
Salaaaaaad = romaine lettuce + spinach + cucumber + avocado + carrots + lentils + tahini dressing + balsamic vinegar.
And some plain roasted red potatoes cut into "fries" - roast at 425 for about 35 minutes, then broil on high for 1-2 or until crispy :) dipped them in some spicy brown mustard!
I snacked on an apple that I forgot to take a picture of, but it's just an apple, so I don't think that's a big deal, right? Maybe next time I'll remember.
Dinner: two slices of Trader Joe's mini sourdough boule bread topped with steamed kale and spaghetti squash mixed with hummus and nutritional yeast. I didn't stop at two slices of bread though...
And I finished the night off with a chocolate-coated PB squarebar while I sat in a meeting, so no, I did not take a picture.
