Chocolate-Dipped Date Bombs (Vegan, GF, Paleo)

Can we all just agree that dipping any- and everything in chocolate is a justified form of self-care? 

Think about it. You (probably) work your azzzz for what you earn, whether that be an income, or just any sense of satisfaction and accomplishment. You take care of yourself. You feed your body the fueling foods (most of the time). You give yourself adequate rest. You stay active, moving and stretching in a way that brings you joy. You encourage your mind and heart with positive affirmations...

... but sometimes, you just need a little something more. Sometimes, you need a massage after a week from hell. Sometimes, you need an extra glass of wine on Friday night. Sometimes, you need to dip yourself in a pool of rich, creamy dark chocolate. 

Okay, wait. Maybe don't dip your entire self into chocolate. Maybe just your finger or a spoon. Either way, chocolate is certainly, if you ask me, a healing food. Don't call it just a "treat", though, like you may for a massage or an extra glass of wine. Chocolate doesn't need any justification. 

Thankfully, I'm finally realizing that self-care doesn't need any justification, either. Since when do I need to prove to another person or defend my reasoning to... well, give myself a little TLC? I guess I'm just the type of person who finds her passion and chases it down, who dives right in and starts swimming immediately, and then feels lost and confused when her running shoes rip up, or when her arms need a break from paddling. 

And that, my friends, is when chocolate breaks down my front door and comes to take care of me. Now, I'm learning to let chocolate in on my own so that the breaking of my door doesn't happen... 

SOOO I'm adding little bits of chocolate here and there to my everyday routine. Like, let me dip one of my absolute favorite snacks into some rich, creamy chocolate to take nutrition AND self-care to the next level. Ya' feel? 

Makes 4-5 servings (8-10 dates)

1 Eating Evolved Signature Dark chocolate bar
NuttZo Power Fuel crunchy nut butter (1 tsp. per date)
8-10 medjool dates, pitted
Sea salt, for garnish
Shredded coconut, optional

  1. Begin by carefully peeling open each date, leaving a small portion of one end intact. Stuff each date with 1 tsp. NuttZo and freeze for 5-10 minutes, until slightly firm. Line a plate or baking pan with parchment paper and set aside
  2. Melt the chocolate in double-boiler over the stove or in 30-second increments in the microwave. Dip each date halfway into the chocolate and lay on parchment paper. Sprinkle with sea salt and coconut (if using), and repeat until tall the dates and chocolate are used up. 
  3. Freeze 30-60 minutes, or until the chocolate has set. Serve immediately and store leftover in the fridge for 2 weeks or freezer for up to 1 month. 
  4. Enjoy!
