Salted Caramel Cashew Butter (Vegan, GF, Paleo)

You had me at "salted caramel". 

Ladies and gentleman, I give you a guaranteed sweet-tooth-satisfier, whether by the spoonful or by other means of transportation to your mouth. 

You are certainly welcome :) 

Makes about 1 cup

1 cup cashews, soaked at least 4 hours (or 2 hours in hot water)
6 medjool dates
2 tbsp. almond milk
1 tsp. vanilla extract
1 tsp. sea salt

  1. Drain and rinse the cashews.

  2. Toss them and the rest of the ingredients into a high-speed blender or food processor and blend until smooth.

  3. Transfer to an airtight container and store in the fridge until ready to use.

  4. Enjoy!
